The horseradish (Armoracia rusticana) is a rustic perennial that grows to a height of about 50 cm, with large, rough leaves in an intense shade of green. The root is rather spicy and aromatic and it is used to prepare the typical Horseradish spread: a traditional recipe in the culinary tradition of many Italian regions, particular in the north: Veneto, Piedmont, Trento, Friuli and Emilia-Romagna. Also known and used abroad (Austria, Hungary, etc.), it goes well with boiled beef, roast beef, grilled meats, seafood and eggs. In German culinary tradition, horseradish is served with sausages and boiled meats and often also with egg dishes.
